Stir Fried Pork Recipe with Spring Onion

450g lean boneless pork
1 tbsp Shaoxing rice wine or dry sherry 1 tbsp light soy sauce 2 tsp sesame oil 1 tsp corn flour 8 spring onions 1 tbsp groundnut( peanut oil) 2 tsp salt 1 tsp freshly ground black pepper 1 tsp sugar

Cut the pork into thin slices5
cm long.
Mix with the Shaoxing rice wine or dry sherry, soy sauce, sesame
oil and corn flour. Leave to marinate about 20 minutes. Slice the spring
onion diagonally into 5 cm lengths.
Heat a wok or frying pan until it is very hot. Add the oil when it's very hot and slightly smoking, add the pork slices, then stir-fry them until they are brown. Add the spring onions, salt, pepper and sugar. Continue to stir-fry until the pork is cooked slightly firm-about 5 minutes. Remove and arrange on a warm serving platter. Pour any remaining juices
in the wok over the pork and serve. |
